Today,
4 volunteers and I went to a cooking class with Willi’s mom, Beatriz. Willi
lives in the town of Las Mañintas, so we took the local bus over to his house.
We made doublatas and chuchitos. Doublatas are like empanadas except they are
fried and made with corn flour, while empanadas are made with wheat flour and
baked. The doublatas had a mixture of potatoes, onions, tomatoes, and bell
peppers inside them. We helped Beatriz cut all the vegetables, and then she
boiled all of them. Afterwards, she showed us how to make the dough and how to
shape and stuff the doublatas. Then, they were cooked in oil. Once they were
finished, we garnished them with a vinegar salad and a tomato salsa. Next, we
made the chuchitos. We used corn meal to make the dough and used the left over
tomato salsa with some carne added for the filling. Next, we put them in the
corn husks. This was the hardest part and I made a huge mess trying to cover up
the filling then put the chuchito in the corn husk. Afterward, we boiled the
chuchitos. Both dishes were delicious! It is the best Guatemalan meal that I
have had here so far!

After
the cooking class, we headed back to the parque to say goodbye to TJ. He was
heading back to the States in order to get back to school on time. It was sad
to see one of my friends leave for good. I hope that some more cool volunteers
come and keep me company!
We decided to go to dinner at Myra’s to have a good,
filling dinner. Since it was dark, we walked the beach to her house instead of
the road. Lucky we did because a turtle came up! A parlamero had already
claimed her, but Glenda and I stayed to get the donation. It turned out that
the parlamero was related to one of the hotel managers that we had dinner with
way back when. Because Glenda paid for dinner, the hotel manager gave us the
whole nest as a donation!!! It was so exciting! We ended up getting to dinner
super late, but I was ok with it!
